For an easy, no-cooking-required appetizer on a busy weekend, throw together five simple ingredients for this delightfully tasty, colorful snack.
- To make a balsamic reduction, bring 1/3 cup balsamic vinegar to a boil in a small saucepan then reduce to a simmer for 10 minutes. It is ready when it coats the back of a spoon. Allow to cool before using.
- Meanwhile, carefully scoop out about half of each avocado with a small spoon and slice the removed portion into cubes. Place in a bowl with the tomatoes and mozzarella and sprinkle with salt and pepper. Toss gently to ensure everything is seasoned, then evenly distribute the filling into each avocado bowl.
- Top with basil, drizzle with balsamic and serve immediately cold or at room temperature.
