Carrot Cake Cupcakes

Wonderfully rich and moist, these cupcakes are a perfect treat for a birthday or a holiday dessert.

  1. Mix together all of the dry ingredients in a large mixing bowl.
  2. Grate carrots into a large bowl.
  3. In a separate large bowl, mix together the grated carrots, eggs and oil.
  4. Add flour into wet mixture.
  5. Mix well and pour into lined cupcake pan.
  6. Bake at 350 for 20 minutes if making cupcakes. Can also be made in a bundt pan (bake time 45-55 minutes) or 3 greased 9 inch rounds for 25 minutes.
