Cashew Chicken Dinner

Now that cashews have proven to be a great source of protein and healthy oils, what better way to honor this flavorful nut than to pair it with America's most popular protein? Cashew chicken is more than just a flavorful way to make your next chicken dinner more interesting. A host of other healthful ingredients make it a smart choice for everyone at your table. Double this recipe for leftovers that will earn rave reviews.



  1. Prepare plain chicken as preferred or from leftover cooked chicken. Chop into bite sized pieces. Set aside.
  2. Combine all ingredients except for the cashews, onion and rice into a pan. Cook until soy sauce is slightly reduced.
  3. Add chicken and stir until warm. While chicken is cooking, microwave rice and divide into bowls.
  4. Add cashews and stir. Pour chicken mixture over rice and garnish with more cashews and onions. Serve immediately.
