A fast dinner for anyone trying to avoid carbs.
- 1. Adjust oven rack to middle position and preheat to 425 degrees.
2. In a large bowl combine cilantro, oregano, red pepper flakes, 1/4 cup olive oil, and salt and pepper to taste. Toss with chicken pieces then place on a foil lined baking sheet and place in the oven. Cook for 30 minutes, or until internal temperature of chicken has reached 165 degrees.
