Cauliflower Grilled Cheese

Skip out on the bread, but not the flavor, with a grilled cheese served on two warm cauliflower patties.


Select ingredients:


  1. Chop cauliflower into florets. Add cauliflower florets into a food processor and blend until it resembles rice. If you do not have a food processor, grate the cauliflower florets.
  2. Mix the processed cauliflower, eggs, Parmesan and oregano in a medium bowl. Sprinkle salt and pepper over the mixture.
  3. Place a large nonstick skillet over medium heat and spray with cooking spray. Take a scoop of the cauliflower mixture and form into a small patty and place on one side of the pan. Repeat to form a second patty on the other side. These patties will be used as the bread for the sandwich. Use a spatula to press down on both pieces. Cook for about 5 minutes, or until golden underneath. Flip the patties and cook for another 3 minutes, or until the other sides are golden.
  4. Add cheese on top of one cauliflower patty and then top with the other cauliflower patty. Cook until the cheese is melted, about 2 minutes more per side. Repeat with remaining ingredients to make more sandwiches.
