For a healthier pizza option that you are bound to love, try this cauliflower pizza crust topped with a blend of cheeses, marinara sauce, pepperoni and basil.
- Preheat the oven to 400 degrees F. Line a half sheet pan with parchment paper, set aside.
- Cut the cauliflower into florets. Pulse florets in a food processor until riced. Place in a pot of simmering water and cook for about 10 minutes. Place a clean tea cloth in a strainer. Pour the cauliflower into the cloth. Let cool and then squeeze the excess water out.
- In a bowl, combine the cauliflower with mozzarella, Parmesan, oregano, salt, pepper, garlic powder, onion powder, and eggs. Transfer the mixture to the prepared sheet pan. Press and shape into a heart, about 1/2 to 3/4-inch thick. Bake in a preheated 425 degrees F for 20 minutes.
- Take out of the oven and spread with marinara sauce, top with pepperoni, and shredded cheese. Bake for an additional 10-15 minutes, or until the cheese is golden color and bubbly. Slice and serve immediately.
