Pop into the New Year with this fun Champagne Jello Shot recipe. These jiggly cubes are spiked with Pop Rocks candy for extra bang! Let the fireworks begin.
- In a bowl, pour 1½ cups of the champagne and sprinkle gelatin on top. Let sit for one minute. In a small pot, bring grapefruit juice, ¼ cup of the champagne, and sugar to a boil. Reduce heat to a simmer and stir until sugar is completely dissolved. Remove from heat and pour contents into the bowl. Stir until gelatin is dissolved.
- Pour liquid into cube-shaped molds, an ice cube tray, or a small loaf pan or square container and place in the refrigerator to set for at least two hours.
- When ready to serve, remove gelatin from molds, slicing into cubes if using a loaf pan, and arrange on a serving tray or plate. Sprinkle Pop Rocks on top just before serving. The candy will lose its explosive effect shortly after coming in contact with gelatin cubes, so it’s best to consume immediately.
