- In a mixing bowl, combine the cherries, sugar, lemon juice, cinnamon, nutmeg, salt, vanilla, and cornstarch.
- Spoon the cherry mixture onto the bottom of the prepared pie crust. Dot the butter over the top of the cherry mixture. Add the top layer of pie crust and crimp along the edges. Cut a few slits in the crust to allow steam to escape.
- Bake in a 400-degree oven for 20 minutes and then reduce to 350 degrees and bake for an additional 30 to 40 minutes.
