Cheesy Asparagus Stuffed Roasted Red Pepper Chicken

This meal is very easy to make, but looks very elegant and more involved than it really is. Impress your loved one with this dish served with a complimentary glass of Cabernet Sauvignon.


Select ingredients:


  1. Preheat the oven to 350 degrees.
  2. In a large pot over high heat, boil water and then add the asparagus. Cook the asparagus like this for 1 minute and remove from the boiling water. Cut up the asparagus into small, bite sized pieces.
  3. In a separate bowl, mix the red pepper, pesto, asparagus and cheese.
  4. Place the chicken on a flat surface and add a little half the pepper/asparagus/cheese mixture to the end of the chicken and roll up.
  5. Place the chicken on a baking sheet (covered in foil for easier clean up) and bake for 10-12 minutes, or until the chicken is cooked through and the cheese is melted.
  6. Remove the chicken from the oven and let cool before slicing and serving! This could be served with a side of vegetables and rice for a complete meal!
