- Preheat the oven to 350°F and grease a 9x13 inch baking dish with non-stick cooking spray. Place the spinach in a clean kitchen towel and squeeze out any excess moisture.
- Whisk the spinach, half-and-half, cheddar, mozzarella, cream cheese, eggs, mustard and salt together in a large bowl until combined. Fold in the bread and bacon until just combined.
- Pour the egg mixture into the prepared dish and bake until the top is light golden brown and the center is set, about 45-55 minutes. Let cool for 15 minutes before slicing. Top with the parsley and serve.
Recipe Tip: Feel free to substitute Monterey Jack, Gruyere or Parmesan for the cheddar and mozzarella cheese!
