Cook the cauliflower according to package directions.
Puree the cauliflower and place in a bowl.
Add the salt, the pepper, the garlic powder, the egg, the Parmesan cheese, and the Cheddar Jack cheese.
Use a heaping tablespoon of the mixture and shape them into the “tater tot” shape. Place them on a parchment-lined baking sheet and bake in a 425-degree oven for 15 to 20 minutes and flip them halfway through (re-shape if needed).
