A potato side dish is pretty much a must-have for a holiday meal in many families. And although mashed potatoes and baked potatoes are delicious, let’s make the holiday a little merrier with an extra special potato recipe. These Fanned Scalloped Potatoes (also known as Hasselback potatoes) are creamy and super cheesy with two different varieties of cheese mixed in – white cheddar and parmesan. And here’s a tip for slicing your potatoes - a sharp knife can certainly do the job, but if you own a mandolin slicer, that can help you achieve thin cuts more easily.

- Preheat the oven to 375°F. Grease a 9x9 baking dish.

Mix together the heavy cream, 1/4 cup of cheddar cheese, Parmesan cheese, garlic, thyme, parsley, salt and pepper in a large bowl.
- Add the sliced potatoes and mix to combine.

Arrange the potato slices vertically and tightly in the prepared baking dish. Pour any leftover cream mixture over the potatoes.

Bake for 1 hour. Sprinkle with the remaining 1/4 cup of cheddar cheese and continue baking for an additional 30 minutes or until the potatoes are tender and the top is golden brown.
Recipe Tip: Select potatoes that are longer and thinner to fill the dish more easily.
