One of the rewards for spending so much time in the kitchen during the hubbub of the holidays is a heap of tasty turkey in the fridge. Enjoy using your leftovers as a shortcut for many meals to come, like this homestyle casserole, layered with creamy, cheesy mashed potatoes, gravy and fried onions. Serve this delicious supper with coffee or tea for a cozy winter meal!

Select ingredients:

  1. Preheat the oven to 400°F. Lightly grease a 9x13 inch baking dish with cooking spray. Heat the water in a large saucepan over medium-high heat. Stir in the instant mashed potatoes, milk and mayonnaise until combined, about 2 minutes.
  2. Combine the turkey and gravy in the prepared baking dish. Spread the potato mixture evenly over the turkey mixture. Top with the cheese and the fried onions.
  3. Bake for 30-35 minutes until light golden brown. Top with the parsley.
  4. Serve with coffee or tea and creamer.

Recipe Tip: Substitute shredded chicken for shredded turkey, and chicken gravy for turkey gravy, to make this recipe year-round!
