A healthy way to sneak in veggies, plus an elegant way to serve macaroni and cheese.
Wash and chop kale.
Chop onion and garlic.
In a large frying pan, heat butter and add onion and garlic. Stir for about 2-3 minutes, or until onion just begins to turn translucent.
Add in orzo pasta. Stir to mix in with onion, garlic and butter. Orzo will start to brown.
Add in chicken broth and water. Bring to a boil. Let boil until orzo is cooked al dente.
Add in parmesan cheese, salt, pepper and kale. Stir until mixed thoroughly and kale has wilted. Transfer to serving bowl and serve immediately.
