Turn your boring baked potato up a notch by making these cheese-topped twice-baked potatoes! Easy to make, they can be prepared ahead and reheated just in time to serve.
Ingredients
Directions
-
Bake potatoes in a preheated 375 degree oven for 1 hour, 15 minutes.
- Remove potatoes from oven and set aside to cool, 30-45 minutes.
-
When potatoes are warm, but not hot to touch, slice lengthwise in half, to create 8 potato halves. Using a spoon, scoop out the potato meat into a bowl, saving the skins.
- Add butter and French onion dip to the potato mixture and mix well, either mashing mixture or blending with a mixer.
-
Using a spoon, spread potato mixture into the potato skins. Top with grated cheese. Potatoes can be refrigerated at this point until 30 minutes before serving.
