Cherry Glazed Pork Loin

Pork and stone fruits — like plums, apricots and cherries — are a classic culinary pairing. The fruits’ honeyed sweetness plays off of the robust flavor of the pork for a balanced, harmonious combination. In this recipe, we use the smooth, mellow flavor of cherry preserves, the tart punch of cranberry juice and warming herbs and spices to make a gorgeous glaze for the roasted pork loin. Together, they make a festive entree, great for a family gathering or a leisurely dinner with friends.

- Preheat the oven to 350°F. Pat the pork dry with paper towels and season with the salt and pepper. Place the pork on a rack in a roasting pan. Bake until it reaches 145°F, about 45 minutes to 1 hour.
- Meanwhile, bring the cherry preserves, cranberry juice, rosemary, nutmeg and cinnamon to a simmer in a small saucepan over medium heat. Cook, stirring occasionally, until thick, about 5-8 minutes.
- 20 minutes before the pork is finished cooking, brush with 1/2 cup of the cherry sauce. Let the pork rest at room temperature for 10 minutes before slicing. Serve with the remaining cherry sauce and enjoy.
Recipe Tip: Substitute apricot preserves for the cherry preserves, and orange juice for the cranberry juice, to create an apricot glazed pork loin!
