This Mexican-inspired dish is a homemade version of the freezer aisle favorite – taquitos! Quick and easy to make, these Chicken, Black Bean & Cheese Taquitos are cheesy, zesty and crafted using rotisserie chicken, saving you cooking time and getting dinner on the table even faster. Besides being packed with flavor on the inside of the tortillas, you’ll also top them with an avocado salsa made with tomatoes, red onion, lime juice, avocados and some salt and pepper. Keep in mind, if the avocados you have on-hand aren’t quite ripe, place them in a paper bag at room temperature to speed up the ripening process. Soon enough, you’ll have perfectly ripe avocados for your salsa! And for the spice-lovers in your family, a little hot sauce on top is the perfect addition.
- Preheat oven to 425°. Coat baking sheet with Food Lion Nonstick Cooking Spray. In a large bowl, combine beans, chiles, and cheese. Season with cumin, garlic powder, salt and pepper to taste. Using a potato masher, smash ingredients until combined and slightly chunky. Add chicken. Taste and adjust seasonings if necessary.
- To prevent tortillas from breaking, stack 15 on a plate (with 2 in each layer) separated by damp paper towels. Make sure to cover the top of the stack and microwave for 25 seconds.
- Fill each tortilla with about two spoonfuls of bean mixture each. Roll up and place, seam side down, on baking sheet. Spray once more with cooking spray and bake 18-22 minutes, until very crispy.
