As you prepare for another school year, you may already be thinking through lunch options, no matter where school is in session. After all, kids like a little bit of variety in their lunch box. But, for us parents, we need their lunches to be easy to make and affordable, right? Luckily, these Chicken Bacon Ranch Roll-Ups are both of those things and gives your little ones a lunch option that’s different and delicious! So, in between turkey and tuna sandwiches, try making these roll-ups using spinach wraps, cream cheese, ranch, chicken, bacon, tomato, lettuce and some salt and garlic powder. And if you’re thinking about making some for your own lunch, top with some chopped chives!
Lay a large piece of food wrap under each tortilla. In a medium bowl, mix together the cream cheese, ranch, salt and garlic powder. Spread the mixture evenly across each tortilla wrap.
In a separate bowl, mix together the chicken, bacon, lettuce and tomato by hand. Spoon over the wraps in a thin layer, then roll them up very tightly.
Wrap tortillas in plastic wrap and refrigerate for at least 1 hour. Before serving, run a sharp knife under hot water for 20 seconds, pat dry and cut wraps into 1-inch pinwheels. Garnish with chives.
