Rotisserie chicken is a quick and easy option for getting dinner on the table in no time. But, if you want to try it in a new way or use up leftovers, these Chicken BLT Tacos are oh-so delicious. Made with 10 ingredients, including bacon, lettuce, tomato, rotisserie chicken and tortillas, plus a homemade ranch sour cream, these tacos are low-cost and full of flavor. You could even add some avocado slices on top to make them Chicken BL-A-T Tacos!
- Heat olive oil in a large sauté pan over medium-high heat, tilting the pan in every direction to make sure entire surface is covered.
- Fry tortillas in batches of 3, about 30 seconds each side (enough to brown them but not so long that they become crispy). Keep warm by covering each batch with a paper towel and layering on top of one another.
- In a medium bowl, mix together the ingredients for the ranch sour cream.
- Stuff the tortillas with chicken first, then tomatoes, lettuce and ranch sour cream. Top with bacon.
