- Preheat oven to 350°degrees. Lightly spray a 9x9 baking dish with nonstick cooking spray. Set aside.
- Heat oil over medium heat. Add onion and garlic. Saute for 2-3 minutes. Add broccoli and cook for an additional 4 minutes. Stir in garlic powder, cumin and cayenne. Add mushrooms.
- Stir in chicken broth, heavy cream and eggs. Whisk to combine. Remove from heat.
- In a large bowl, combine broccoli mixture, chicken, and quinoa. Pour into prepared baking dish. Bake for 30 minutes or until center is set.
