Dice the onion.
Dice the celery.
Dice the bell pepper.
Combine all the vegetables in a small bowl.
Add mayonnaise and mix thoroughly. Add the salt, pepper, and ground pepper and stir.
Chop the chicken into small pieces. Add to the mayonnaise/veggie mixture and stir well.
Line each pita pocket with your choice of spinach or lettuce, then spoon the chicken salad into the pita pockets.
