Chicken Scallopini with Granny Smith Apples

This delicious dish comes together from prep to completion in little to no time for your family to enjoy!


Select ingredients:


  1. Heat the oven to 350 degrees.
  2. Pat the chicken dry and season with salt and pepper.
  3. Into a large skillet over medium high heat, pour 2 tablespoons of oil. Lay the chicken in the pan without crowding and cook, in batched if necessary, until browned. Turn and cook for about 3-4 minutes. Transfer the chicken to a foil lined baking sheet pan.
  4. Quarter the apple. Cut out the core then slice each quarter into thirds so that there are 12 slices.
  5. Top each scallopini with 3 apple slices and blanket with brie.
  6. Place the pan in the oven and cook until the cheese melts and the chicken is cooked through.
  7. Transfer the chicken to a platter, garnish with dried cranberries, and serve.
