In less than 30 minutes, grill up this tender chicken breast topped with pepper jack cheese, grilled red onion, lettuce and sandwiched between two grilled pineapple rings.
- In a large Ziploc bag, bang the chicken with a wooden rolling pin or meat tenderizer to flatten and even out the chicken breasts. Marinate in your choice of marinate.
Preheat the grill to medium to high heat. Place the chicken breasts, pineapple, and red onion on the grill. Cook about 4-6 minutes on each side. Flipping only once.
Cut each chicken breast into half, then top the with a slice of pepper jack cheese. Place one piece of grilled pineapple on the bottom, then layer with lettuce, grilled chicken, bacon, red onion, and another slice of grilled pineapple. Enjoy immediately.
