Hearty comfort meal that the whole family will enjoy. Packed with veggies, protein and whole grains.
Cook spaghetti according to package instructions. Drain noodles and set aside.
In a large skillet, heat 2 Tbsp. olive oil and saute the onion and bell pepper on medium-low heat.
Add the diced tomatoes and green chiles, salt and pepper. Transfer mixture to a large mixing bowl and add Cream of Chicken soup. Stir in spaghetti and cheese.
Pour mixture into casserole dish and cook uncovered for 25 minutes at 400 degrees. Let rest for 5 minutes before serving.
