Chicken Tetrazzini Pasta Nests

Noodles and chicken: sounds simple enough, but you can make this classic dish more fun when you nest the noodles and top of them with this savory mixture of creamy chicken. Not only is this dish very economical, when plated this way, each diner will get his or her own little chicken noodle nest that's already properly proportioned.

  1. Melt butter and mix in flour to make a roux. Add milk and continue stirring. Add chicken broth and bullion cube. Add chicken and mushrooms. Continue cooking until mixture thickens to desired consistency.
  2. Boil pasta in water prepared with olive oil and salt to keep pasta from sticking, careful to keep nests together (do not stir pasta.) Drain pasta by spooning each nest into a sieve and then transferring a single nest or two onto a plate.
  3. Spoon chicken mixture atop pasta and garnish with almonds and chopped parsley. Serve immediately.
