- Mash chickpeas and brown rice together until a thick paste forms. Stir in shallot, garlic, and parsley. Blend in egg the egg and season mixture with salt and pepper. Stir. Form chickpea mixture into four 1/2-inch-thick patties.
- Heat olive oil in a large skillet over medium-high heat. Cook chickpea patties until golden brown, approximately 5 minutes per side. Once cooled, serve with mustard and top with red onion and tomatoes. Wrap in lettuce for a healthy alternative burger.
