Chickpea Brown Rice Veggie Burger

Filling and tasty veggie burgers are hard to find. This recipe fulfills both of those requirements. These burgers are tasty for everyone. They're meat eater approved!


Select ingredients:


  1. Mash chickpeas and brown rice together until a thick paste forms. Stir in shallot, garlic, and parsley. Blend in egg the egg and season mixture with salt and pepper. Stir. Form chickpea mixture into four 1/2-inch-thick patties.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chickpea patties until golden brown, approximately 5 minutes per side. Once cooled, serve with mustard and top with red onion and tomatoes. Wrap in lettuce for a healthy alternative burger.
