- Place the chunks of melon in a large serving bowl and add salt, chili powder and lime juice and zest a little at a time, tossing as you go. Taste occasionally, as the size of the melons you used will determine just how much seasoning you will need. When melon is coated, serve cold immediately or store for no more than two hours.
