Chilled Whole Wheat Noodles with Edamame and Cilantro Vinaigrette

This vegan noodle salad makes a great brown bag lunch, just make sure to add only half the dressing and reserve the rest to pout over just before you eat it.


Select ingredients:


  1. Cook the linguine according to package directions, then place in ice water until fully chilled. Let sit in a strainer to fully drain.
  2. Mix chopped cilantro with lime juice, mirin, soy sauce and sesame oil in a small bowl.
  3. Toss chilled pasta with edamame beans, red peppers, and scallions then pour dressing over pasta and toss. Season to taste with salt and serve garnished with toasted sesame seeds.
