- Preheat the oven to 450°F and line a baking sheet with parchment paper. In a small bowl, whisk together mayonnaise, lime juice and chipotle pepper. Set aside.
- Heat olive oil in a skillet set over medium-high heat. Add Mindful Chik’n™, corn, salt, cumin and chili powder. Sauté for 5 minutes.
- Spread pizza dough onto the prepared baking sheet. Top with cheese and Mindful Chik’n™ and corn mixture. Bake for 15-20 minutes until the cheese is melted and the crust is light golden brown.
- Top with avocado, red onion and tomatoes. Drizzle with chipotle mayonnaise and garnish with fresh cilantro.
