Vegetarian Chipotle Chik’n Flatbread

When it comes to Game Day food, you want the dishes you make to be quick, easy and a real touchdown in flavor. Well, this vegetarian flatbread is all three of those things. Talk about a win, right? Made with a plant-based “chik’n” protein, veggies, cheese and a chipotle mayo drizzle, this appetizer is filling, zesty and fresh in flavor. For the dough, you can either use a packaged product or snag a bag of fresh pizza dough from your local Food Lion in the deli area.

- Preheat the oven to 450°F and line a baking sheet with parchment paper. In a small bowl, whisk together mayonnaise, lime juice and chipotle pepper. Set aside.
- Heat olive oil in a skillet set over medium-high heat. Add Mindful Chik’n™, corn, salt, cumin and chili powder. Sauté for 5 minutes.
- Spread pizza dough onto the prepared baking sheet. Top with cheese and Mindful Chik’n™ and corn mixture. Bake for 15-20 minutes until the cheese is melted and the crust is light golden brown.
- Top with avocado, red onion and tomatoes. Drizzle with chipotle mayonnaise and garnish with fresh cilantro.
