Chocolate Cherry Cake with Whipped Topping Frosting

My husband's favorite cake - A moist and fruitful chocolate cake.



  1. Preheat oven to 350 degrees. Grease and flour one 9-inch x 9-inch baking pan.
  2. In a large bowl, combine flour, sugar, cocoa and baking soda. Add water, mayonnaise and vanilla; beat at medium speed until thoroughly combined.
  3. Pour into baking pan. Bake at 350° for 35-38 minutes or until cake tests done. Cool completely.
  4. Cut cake horizontally with a long bread knife to create two layers. Set one layer aside. Place one on a large plate. Spread cherry pie filling over bottom layer almost to edge. Place the second layer on top of the bottom layer. Gently spread whipped topping over the entire cake. Top the cake with sprinkles. Refrigerate any remaining cake.
