Chocolate Covered Cherry Cookies

Cherry cordials take a new life in these cookies. Delicious on their own or with a tall glass of milk.

- In a large mixing bowl, using either a stand mixer or an electric hand mixer, cream together butter and sugars. Add the cocoa powder and egg, and combine. Use a rubber spatula to scrape the sides and bottom of the bowl occasionally.
- Add the vanilla, salt, flour, baking powder, baking soda and combine. The cookie dough will be quite firm. Shape into 1-inch rounds and place on half sheet pans lined with parchment paper. Leave a little space in between the cookies, as they will spread a little. Press your index finger or thumb into the center of each round. Then, place a maraschino cherry in each indentation.
- For the frosting, melt the chocolate in a saucepan, with the heavy cream over low heat. Remove from the heat and add a few teaspoons of the maraschino cherry juice. Stir until the mixture is smooth.
- Spoon over a little chocolate frosting on each cookie. The frosting will spread a little during the baking process. Bake in a preheated 350 degree F oven for 12-13 minutes.
