Chocolate Covered Cherry Cookies

Cherry cordials take a new life in these cookies. Delicious on their own or with a tall glass of milk.

  1. In a large mixing bowl, using either a stand mixer or an electric hand mixer, cream together butter and sugars. Add the cocoa powder and egg, and combine. Use a rubber spatula to scrape the sides and bottom of the bowl occasionally.
  2. Add the vanilla, salt, flour, baking powder, baking soda and combine. The cookie dough will be quite firm. Shape into 1-inch rounds and place on half sheet pans lined with parchment paper. Leave a little space in between the cookies, as they will spread a little. Press your index finger or thumb into the center of each round. Then, place a maraschino cherry in each indentation.
  3. For the frosting, melt the chocolate in a saucepan, with the heavy cream over low heat. Remove from the heat and add a few teaspoons of the maraschino cherry juice. Stir until the mixture is smooth.
  4. Spoon over a little chocolate frosting on each cookie. The frosting will spread a little during the baking process. Bake in a preheated 350 degree F oven for 12-13 minutes.
