Chocolate Mint Shamrock Cupcakes

- Makes 24 cupcakes
Everybody loves chocolate (and mint!), so what better way to celebrate the season than with these chocolate mint shamrock cupcakes?
Ingredients
Directions
- Prepare and bake the cake mix according to package directions for cupcakes (make 24 cupcakes). Once baked, set the cupcakes aside to cool.
- To make the frosting: In a bowl, beat together the butter, powdered sugar, cream, and vanilla until the frosting is smooth. Place half of the frosting into a separate bowl.
- To the first half of the frosting, add the cocoa and mix well.
- To the second half of the frosting, add the peppermint extract and green food coloring; mix well.
- When the cupcakes have completely cooled, pipe the chocolate frosting on top of each cupcake. Then pipe additional green frosting on top of the chocolate.
- Top with a mint candy and a shamrock decoration! Enjoy!
