Chocolate Mint Shamrock Cupcakes

Makes 24 cupcakes
Everybody loves chocolate (and mint!), so what better way to celebrate the season than with these chocolate mint shamrock cupcakes?

  1. Prepare and bake the cake mix according to package directions for cupcakes (make 24 cupcakes). Once baked, set the cupcakes aside to cool.
  2. To make the frosting: In a bowl, beat together the butter, powdered sugar, cream, and vanilla until the frosting is smooth. Place half of the frosting into a separate bowl.
  3. To the first half of the frosting, add the cocoa and mix well.
  4. To the second half of the frosting, add the peppermint extract and green food coloring; mix well.
  5. When the cupcakes have completely cooled, pipe the chocolate frosting on top of each cupcake. Then pipe additional green frosting on top of the chocolate.
  6. Top with a mint candy and a shamrock decoration! Enjoy!
