- For the Mousse: Place eggs in mixing bowl and beat until thickened. Next, incorporate sugar.Place 1 cup whipping cream in pan and heat. Once hot, reduce to low heat. Pour 1 / 3 cup of hot cream over egg mixture stirring vigorously. Recombine eggs and cream mixture in pan and continue cooking, continuing to stir vigorously. When egg and cream mixture becomes thick, add chocolate chips and continue to stir until they are melted into the egg and cream mixture. Refrigerate. Place remaining whipping cream in blender and blend until it becomes a firm whipped cream. When chocolate mixture has chilled, stir in whipped cream. Top with peppermint whipped cream and serve with garnish of peppermints and red sugar crystals.
- For the Whipped Cream: Because the chocolate is so sweet, the whipped cream calls for far less sugar so it isn't as sweet. Blend whipping cream, sugar and peppermint extract in a blender until thickened. Stir and blend again. Refrigerate until thickened and serve atop mousse. Garnish with sugar crystals and peppermint candy.
