Classic Creamed Spinach

This steakhouse-style side is creamy and truly irresistible! A dash of chili powder adds just enough spice, and a unique edge to this fall classic.

- Bring a large pot of water to a boil. Blanch spinach in boiling water for 1 minute, then remove and run under cold water to halt the cooking. Set aside.
- In a medium, heavy-bottomed pot melt butter. Once melted, add garlic and onion. Saute until onions are very soft, about ten minutes. If onions start to brown, reduce heat to low.
- Add milk, cream cheese, and spices to onion mixture, stirring gently until smooth throughout. As sauce begins to boil and thicken, add spinach.
- Simmer spinach in sauce for ten minutes, stirring occasionally. Serve immediately.
