This steakhouse-style side is creamy and truly irresistible! A dash of chili powder adds just enough spice, and a unique edge to this fall classic.

  1. Bring a large pot of water to a boil. Blanch spinach in boiling water for 1 minute, then remove and run under cold water to halt the cooking. Set aside.
  2. In a medium, heavy-bottomed pot melt butter. Once melted, add garlic and onion. Saute until onions are very soft, about ten minutes. If onions start to brown, reduce heat to low.
  3. Add milk, cream cheese, and spices to onion mixture, stirring gently until smooth throughout. As sauce begins to boil and thicken, add spinach.
  4. Simmer spinach in sauce for ten minutes, stirring occasionally. Serve immediately.
