A cobb salad meets a deviled egg! Blue cheese with smooth avocado and bacon makes for a great snack.
Ingredients
Directions
- Halve eggs. Place yolks in a separate bowl.
- Mix yolks, blue cheese, dijon mustard, mayo, avocado salt and pepper to taste. Mash until desired consistency. Will be slightly lumpy. Add in apple cider vinegar if desired for extra tart flavor balance.
- Add yolk mix to eggs.
- Top with bacon bits, capers and diced tomatoes.
