Cod in a Boat

Cod is one of those fish that takes on a wonderful flavor when you add anything buttery to it. This easy bread crumb baked cod in a boat is a great way to get more fish in your diet without compromising on flavor. This recipe calls for plain breadcrumbs, but for extra flavor you can substitute for seasoned bread crumbs. However, seasoned breadcrumbs will highlight whatever seasoning is present and may overpower that buttery flavor.



  1. Rinse cod thoroughly. Layer a baking pan with a piece of Reynold’s Wrap tin foil. Place cod in foil in pan and sprinkle it salt and pepper. Pour teaspoon of olive oil over it and broil until fish is flaky and white.
  2. While cod is cooking, melt butter in pan and add panko bread crumbs. Cook until bread crumbs are brown and crunchy.
  3. Top cod with bread crumbs and serve with a lemon wedge.
