During the warm months of the year, nothing hits the spot quite like a frozen treat, like these Confetti Ice Cream Sandwiches. Made with sugar cookie mix, sprinkles, vanilla ice cream and a few other baking essentials, this sweet confection is something both kids and adults will love. Make them while on vacation (or at home) for a special dessert that’s easy to put together and grab from the freezer to enjoy when a craving strikes.

- Preheat the oven to 375°F. Line two baking sheets with parchment paper.

Mix together the cookie mix, butter, egg and vanilla until evenly combined. Add sprinkles and mix until just combined.

Scoop 1 1/2 tablespoon-sized balls onto the prepared baking sheets spacing 2 inches apart. Bake one sheet at a time for 8-10 minutes or until edges are light golden brown. Let cool 2 minutes before transferring to a wire rack to cool completely.

Allow the ice cream to soften for 5-10 minutes on the counter. Scoop a quarter cup onto one cookie and top with a second cookie. Repeat with the remaining cookies and freeze for at least 30 minutes before serving.
