Corn and Jalapeno Dip

The next time the craving for a cheesy, melty snack strikes, try this Tex-Mex-inspired dip! The combination of smoky bacon, spicy jalapeno peppers, tangy cream cheese and zesty pepper jack cheese is too irresistible. Be sure to serve with plenty of tortilla chips so that everyone can dig in.

- Heat a large cast iron skillet over medium heat. Add the bacon and cook, stirring occasionally until well browned, about 5-8 minutes. Add the jalapeno and corn and cook until tender, about 4-5 minutes.
- Stir in the cream cheese, Pepper Jack cheese and sour cream until the mixture is smooth.
- Top with the chives and serve warm with the tortilla chips.
Recipe Tip: Make it in the slow cooker! Cook the bacon and combine with the remaining ingredients in a 4-quart slow cooker. Cover and cook on high for 3 hours, or on low for 5 hours, until melted. Serve warm with tortilla chips and enjoy!
