This versatile salsa takes only minutes to prepare. It is a winning appetizer served with tortilla chips. Or use it as a topping for grilled fish or chicken. The hearty salsa will keep in a covered container in the refrigerator for up to 2 days.

  1. Stir together the lime juice, cilantro, jalapeno pepper, garlic, sugar, salt, and pepper in a medium bowl.
  2. Stir in the beans, tomato, corn, and scallions. Taste and adjust the seasoning.
  3. Refrigerate in a covered container for at least 1 hour before serving to allow the flavors to blend.
