Couscous, Lentil and Arugula Salad with Garlic-Dijon Vinaigrette

This fresh arugula salad is mixed with whole-wheat couscous, lentils, cucumbers, tomatoes, and feta cheesed, and all drizzled with a home-made vinaigrette. With a 3 star rating from Guiding Stars, this salad is a great choice for lunch or served as a side salad with dinner.

- In a small saucepan, bring vegetable broth to a boil. Add couscous, cover the saucepan, remove it from the heat and let it stand for 5 minutes, until the liquid is absorbed.
- Whisk vinaigrette ingredients in a small bowl until smooth.
- Pour ¼ cup of the vinaigrette over arugula in a large bowl and toss to coat. Divide the arugula between four plates.
- Add another ¼ cup of vinaigrette to the couscous and lentils and toss. . Split the couscous mixture among the plates. Add cucumber, tomatoes and feta to each salad.
- Drizzle 1 tablespoon of vinaigrette evenly over each salad.
