This quick and easy appetizer is a spin on a traditional queso dip. So, if you’re thinking about making some queso for your next Mexican meal or small gathering with friends, but want to try something new, make sure you have this Cowboy Queso handy. Made with two kinds of cheese, milk, black beans, corn and tomatoes with chiles, this easy dip is zesty with a slight kick. Garnish with fresh cilantro and serve with store-made tortilla chips from your neighborhood Food Lion.

  1. Cut the Velveeta cheese into cubes.
     Velveeta cheese being cut on a cutting board.
  2. Heat a medium saucepan over medium heat and add milk, Velveeta and Pepper Jack cheese, stirring constantly until melted.
     Velveeta melting in a skillet.
  3. Fold in the beans, tomatoes with chiles and corn.
     All ingredients in a skillet.
  4. Serve with tortilla chips. For added spice, garnish with cayenne pepper.
