A great way to use leftover rice.
- Heat both the oils in a large skillet over medium high heat until shimmering then add half the scallions and the garlic and cook until soft, about 3 minutes. Add the green beans and carrots and cook stirring often until carrots begin to soften.
- Add the rice and continue to cook stirring constantly until all the ingredients are evenly incorporated and hot. Add soy sauce and crab continue to cook for an additional 5 minutes. Serve garnished with sliced scallions and lime wedges.
