Crab and green bean fried rice

A great way to use leftover rice.

  1. Heat both the oils in a large skillet over medium high heat until shimmering then add half the scallions and the garlic and cook until soft, about 3 minutes. Add the green beans and carrots and cook stirring often until carrots begin to soften.
  2. Add the rice and continue to cook stirring constantly until all the ingredients are evenly incorporated and hot. Add soy sauce and crab continue to cook for an additional 5 minutes. Serve garnished with sliced scallions and lime wedges.
