These cheesy quesadillas are packed with crabmeat along with scallions, red bell peppers, and jalapenos, all served on whole-wheat tortillas.
- In a medium bowl, mix together Cheddar cheese, cream cheese, scallions, bell pepper, cilantro, jalapenos (if using), orange zest and juice. Add crab and stir in.
- Lay tortillas flat. Scoop one-fourth of the filling on half of each tortilla and spread evenly. Fold tortillas in half, lightly pressing to flatten.
- In a large nonstick skillet, heat 1 teaspoon oil over medium heat. Cook the 2 quesadillas, turning once, until both sides are golden, for 3 to 4 minutes total. Remove from heat and place on a cutting board and cover with foil to keep warm.
- Repeat with the remaining 1 teaspoon of oil and quesadillas. Cut each quesadilla into 4 wedges and enjoy.
