- Preheat oven to 375 degrees. Using an electric mixer, mix wet ingredients and add baking soda, salt, cinnamon, brown sugar and regular sugar. Add in oats, flour and roughly half of the cranberries and pistachios. Stir vigorously with a wooden or other spoon.
- Spoon cookie mixture onto a baking sheet and depress center or cookie with a wet spoon (water helps the spoon not stick to the dough.)
- Sprinkle remaining cranberries and pistachios onto tops of cookies.
- Bake until golden brown, approximately 10 minutes for chewy cookies and 12-13 minutes for crunchy cookies.
