Cream Cheese Lemon Pound Cake

For lemon lovers. Moist cake with a tart glaze that will having you going back for more.

  1. Cream together butter and cream cheese until well mixed. Add sugar and beat on high for 5 minutes. Add eggs one at a time mixing after each. Add instant pudding and flavoring and mix well. Add flour and mix until just blended together. Pour into well-greased and floured 9-inch tube pan and bake at 350 degrees for approximately 1 hour and 15 minutes or until toothpick inserted comes out clean. Cool in pan for 10 minutes then invert onto cooling rack to complete cooling. Once cool place on cake plate to glaze.
  2. For Glaze Place powered sugar and salt into bowl then add juice slowly until thick but still pourable. Slowly spoon over cake until covered. I add the remaining glaze in the hole (some like just a little glaze and some like a lot. This way folks can add more if they want :) ). Enjoy
