Creamed Corn with Red Bell Peppers

This creamy side dish with fresh red bell peppers and spicy jalapenos is great to feed a crowd. It's gluten free and only has 6 ingredients!

  1. Preheat oven to 350 degrees F.
  2. Using a sharp knife, slice the corn kernels off the ear from top to bottom. When finished, scrape the cob again to get all bits of kernels and creamy milk.
  3. Add peppers, jalapenos, heavy cream, 2 tablespoons of salt, pepper, and a generous amount of butter. Mix together well.
  4. Pour into a 9x13 baking dish. Bake until hot and bubbly, 45-55 minutes.
