  1. Heat oven to 350 degrees F. Toss onions in oil, season with salt and pepper, then transfer to baking dish. Bake, stirring occasionally until softened, about 1 hour. Change oven to broil.
  2. Heat butter in a 2 qt saucepan over medium-high heat: add flour, and cook while stirring for 1 minute until smooth. Add cream and wine, stir for 5 minutes until thick. Season with salt, pepper, and nutmeg.
  3. Pour sauce evenly over onions. Sprinkle with parmesan, gorgonzola, and paprika. Broil 2 minutes until cheese is melted and golden brown.
