Creamed spinach is a Southern comfort food in and of itself, but when you make it as a casserole with crispy fried onions on top, you have a heart-warming dish perfect for the holidays. And if you want to make it a bit heartier, simply sauté 8 ounces of sliced mushrooms along with the onions, then continue with the remaining steps. Another great thing about this recipe is that you can prep it the night before to save a little time in the kitchen on Christmas Day.

- Preheat the oven to 400°F. Place the spinach in a clean kitchen towel and squeeze out any excess moisture. Set aside.
- Melt the butter in a large skillet over medium heat. Add the onion and sauté until softened, about 8 to 10 minutes. Add the flour and cook for 1 minute. While whisking constantly, add the milk. Whisk until smooth. Season with the kosher salt and black pepper.
- Stir in the cream cheese, Parmesan cheese and reserved spinach.
- Transfer to a baking dish and top with the crispy fried onions. Bake for 20 minutes, or until hot and bubbly.
