Change up your classic broccoli salad recipe with this creamy, lemon-dressing covered dish that includes quinoa. Make it ahead for a future meal or picnic!
- Cook quinoa according to package directions, usually, bring quinoa and 1½ cups water to a boil then cover and reduce to a simmer for 20 minutes.
- While quinoa cooks, add broccoli, sunflower seeds, shallot and cherry tomatoes in a bowl.
- In a separate bowl, combine yogurt, milk, lemon juice and zest, dill, salt and pepper and whisk to combine.
- When quinoa has finished cooking, fluff with a fork, then add to broccoli mixture and stir to combine. Pour yogurt dressing on top and stir to coat. Add additional salt or pepper to taste and refrigerate for at least an hour or overnight. Enjoy cold.
