This spicy soup may seem simple but it packs a flavorful punch. Serve it up in large bowls for a filling main dish or in smaller portions as a dinnertime side or light cool-weather lunch.
- Heat the oil in a large pot over medium heat and add the onion and salt. SautÃ© until translucent, stirring frequently.
- Add broth and sweet potato to the pot and bring to a boil, then reduce to a simmer for 15-20 minutes or until the sweet potatoes are soft. Keep the heat on medium-low and add the pepper, adobo sauce, milk, coconut milk and cilantro.
- Using an immersion blender, puree the soup until smooth. Add salt and pepper to taste and enjoy hot.
